Referring to an establishment's policies when serving alcohol is crucial primarily to avoid personal liability. Establishments often have specific guidelines and procedures in place to ensure responsible alcohol service. These policies are designed to protect both the staff and the establishment from legal consequences that may arise due to over-serving or serving minors. When servers follow these guidelines, they not only help to minimize risks associated with alcohol service but also ensure that they are acting within the legal framework provided by state and local laws. This adherence can be a safeguard against potential lawsuits or penalties that might occur if an incident arises from non-compliance, ultimately providing protection for the server themselves.

Uniformity in service is important as well, but it primarily contributes to customer satisfaction rather than liability concerns. Impressing guests is not a key objective of policy adherence, nor is filling out paperwork correctly directly linked to the critical responsibility of alcohol service. The core reason remains rooted in legal liability and the safety of both patrons and service staff.
